Eggless Wholewheat Butter Cookies / Easy Eggless Cookies



 


          Are you looking for healthy snack which you can easily pack it for your kiddo's snack box !! Yes..... these are one of the cherished cookies in my home ever!!  We always like to have tea with some healthy, crispy yet filling snack. I prefer to serve tea with Murmura Chivda, Oats cookies or Dhokla

         I tried this cookie twice before and every time it turn out crispy and healthy ( If you are not counting butter calories....... ;) ;) ) These cookies are very easy to make and gives nice buttery flavor. You can serve this cookies with tea/coffee.

                                            


Prep Time: 40 min
Total Time : 1 hour
Makes : 45-50 small cookies

Ingredients:
Wholewheat Flour : 2 cups
Butter : 8 tbsp {room temperature only)
Baking Powder : 1/2 tsp
Chilled Curd/yogurt/dahi : 3 tbsp
Milk : 3 tbsp
Powdered sugar : 3/4 cup
Cardamom powder : 1/2 tsp

Method:
  • In a mixing bowl add whole wheat flour, powder sugar, cardamom powder and butter. Mix this well until you get nice grainy texture like breadcrumbs.
  • If the butter melts while mixing then keep the mixture in fridge for 15 min and then start.     


  • Add curd and baking powder into mixture and give it a gentle mix. Slowly add milk into mixture. Mix and combine dough gently and form a dough. Do not knead the dough.
  • Wrap it with cling  and keep it in fridge for 30 min or you can covered bowl and keep it in fridge.
  • Preheat oven at 180 C/350 F
  • Take off the dough and Place the dough on parchment paper/ butter paper and roll out dough to 1/4 inch thick dusted with little flour.       


  • Cut the cookies using different shapes that you like. Carefully remove scraps without interrupting other cookies and roll it again. 
  • Line up baking tray with parchment paper. Place all cookies on it gently. Bake the cookies for 15 - 18 min till color of cookies changes to golden brown. Let baking sheets cool down completely.        

  • Once it cool down completely, transfer it into airtight container.
                                       
                                                                         
Notes :
  • If you bake cookies in batches, place cut cookies in fridge before baking.
  • Keep the baking tray in the center rack. Do not keep it on bottom heating rods as cookies may burn from bottom side.
  • Do not keep the temperature on low, as the cookies turn soft and moist inside.
  • You can use salted Amul butter also.
  • Cookies stays fresh for 7-8 days at room temperature and 2 weeks if refrigerated properly.
  • You can also add chopped dry fruits also.

  8. At what temperature did you bake the cookies? i don't know if I am missing it here but I don't see the temperature for baking mentioned?

  20. Hey this is great... Just wanted to ask how do you measure 8tblspn of unmelted butter? I mean do we have to keep the unmelted butter in the tblspn?

    1. Sonal....... do not melt the butter. Butter should be at room temperature and while mixing just count with tablespoon.

    1. Butter stick shows tablespoon measurement. You can use 1 stick of unsalted butter.
