Eggless Wholewheat Carrot Muffin

              As I am on vacation and enjoying at my moms placeSunHot smile, I know I am blogging and posting few times. Today I have for you all, healthy, low-fat and delicious carrot muffin. I saw this recipe here and wanted to try out for my family. This is no egg, no butter and no all purpose flour muffin which is surely guilt free and big hit in my familyIn love. I made this long back and saved in draft so that I will post in my vacation days. Do try it and they will definitely praise of you, what else you need !!

Prep Time: 35 minutes | Cook time: 20 minutes | Serves: 2

 

Ingredient

Wheat flour

1 & 1/4 cup

Grated Carrot

3/4 cup

Sugar/jaggery

3/4 cup

Curd

1 cup

Oil

1/4 cup+1 tbsp

Baking powder

1 tsp

Baking Soda

1/2 tsp

Vanilla extract

1/2 tsp

Cinnamon powder

A pinch

Salt

A pinch

Almond flakes

2 tbsp

 

How to make?

  • Grate carrot and set aside. Preheat oven to 350 F. Line up muffin tray with muffin liner.Sieve flour, baking powder, baking soda, cinnamon powder and salt and keep aside.In separate bowl add curd and oil, stir well till combined.

  • Then add sugar and vanilla extract and give it a gud mix till sugar dissolves. Add sieve flour slowly and mix well. Do not overmix.

  • Add grated carrots and almond flakes, stir gently.

  • Pour muffin batter till 3/4 of the liner. Do not overfill. Sprinkle few almond flakes and bake for 15-18 minutes or until toothpick inserted comes out clean. Let it cool down completely on wired rack. Muffin stays fresh for 2 days.

  4. Hai i tried ragi muffins. .which tasted good...but came out as a lump
    and in turn got harder. .what could b the reason. ?

    1. Thanks for trying and sharing your feedback !! I think mixing the batter too much could be the reason for dry or hard muffins or another reason is May be you baked them too long or on high temp. Try to bake on low temp because every oven has different settings !! I hope this will help you :)
