Bhindi Pulav–Ladies finger Rice

          Scratching your head what to do with leftover rice ? Its not a big deal when you have ladies finger in your pantry. Today’s post is easy and flavored  “Bhindi Rice”. Okra is our family favorite veggie. whenever I make simple bhindi stir fry, it will finish within no time. All my family needs just hot fluffy chapaties / roti, that’s it !! Last Sunday, I made rice for lunch but after heavy breakfast, my family had only curry, roti and buttermilk. I tried this bhindi pulao with leftover rice for dinner. Raita or pickle goes well with this pulao.

 

 

Prep Time: 15 minutes | Cook time: 20 minutes | Serves: 2

 

Ingredient

Rice (leftover)

2 cup

Bhindi/ Okra

12-15

Onion (chopped )

2 small

Tomato (chopped)

1

Turmeric

1/4 tsp

Red chili powder

1/2 tsp

Coriander powder

1/2 tsp

Ginger garlic paste

1 tsp

Lemon juice

1 tsp

Salt

To taste

 

To Temper

Oil

2 tsp

Bay leaf

1

Clove

2

Cinnamon

2 small piece

Cumin seeds

1/2 tsp

 

How to make?

  • Chop onion and tomatoes finely and keep aside. Wash and pat dry bhindi. Chop bhindi and set aside.

  • Heat 1 tsp oil in a pan, add bhindi, salt and few drops of lemon juice. Cook on low flame for 8-10 minutes till bhindi becomes done and soft.

  • Heat oil in a kadai, add items under table “to temper” and fry for few seconds. Add onion and ginger garlic paste and fry till onions gets golden pink.

  • Add chopped tomatoes with turmeric, red chili powder, coriander powder and salt ( just for masala, as we already added salt in rice). Cook for a minute. Add cooked bindi and stir well.

  • Add leftover rice and lemon juice, give it a good mix. Cook for 5 minutes on medium flame and turn off gas.

  • Serve hot bhindi rice with raita or pickle.
