Instant Dhokla – 5 Minutes Khaman Dhokla In Microwave

                Finally I prepared instant soft, spongy, porous and fluffy dhokla Open-mouthed smile!! As I wanted to try out dhokla  when I saw few sites and like this version. I packed this quick and tasty snack for my daughter. She loved it, so this is one more snack item added in my snack list. Dhokla belongs to Gujrati cuisine and its super fluffy and wonderfulHot smile. This is my quickest version, do try it out and share your feedback ! Smile

Prep Time:5 minutes | Cook time: 6 minutes | Makes: 10 pieces

 

Ingredient for Batter

Besan / Gram flour

1 cup

Curd / yogurt

1 cup

Ginger garlic paste

1 tsp

Turmeric

1/8 tsp

Green chili ( Chopped)

1 tsp

Red Chili powder

1/4 tsp

Sugar

1 tsp

Water

1/4 cup

Oil

1 tbsp

Fruit salt / ENO

1 tsp

Grated coconut

2 tsp

Salt

To taste

 

To Temper

Oil

1 tsp

Mustard seeds

1 tsp

Slit green chilies

2-3

Curry leaves

12-15

Sugar

2 tsp

Coriander leaves

3 tsp

Water

1 cup

 
How to make?
  • Grease microwave safe plastic container with little oil and set aside.

  • In a mixing bowl add besan, curd, sugar, red chili powder, turmeric, salt and stir well for 2 minutes. Add ginger garlic paste, green chillis and oil, mix well till it becomes lump free.

  • Finally add ENO or fruit salt in the batter and give it gentle stir. Do not overmix. you can see the mixture gets frothy.

  • Quickly transfer the batter in to greased microwave container after mixing it. Fill upto 75% (height) of the pan. As we used ENO, batter will rise and become fluffy.

  • Place in microwave for 5 minutes on high setting. Take out dhokla from microwave, insert toothpick, if it comes out clean then dhokla is ready.

  • De mold in plate. Slice into square shapes and keep asideYou can see the soft and spongy texture.

  • For temper, heat oil in a pan on high flame, add mustard seeds and when it splutter turn gas on medium flame. Add curry leaves, green chili, and mix well.

  • Add water and sugar, turn gas on high flame. Boil this water for 2 minutes. Turn off gas and transfer this tempering on dhokla pieces.

  • Pour this tempering on to each dhokla piece evenly.Sprinkle some grated coconut and set aside for 10 minutes, this will help the seasoning settled down and dhokla becomes fluffy and tasty.

  • Serve hot dhokla with hot cup of tea !!

Notes :

  • Do not add excess water as dhokla becomes gooey.

  • Replace fruit salt with 1/2 tsp cooking soda.

  • Pressure cook method : keep ready batter as per the above instructions. Transfer batter into greased pan  ( use any steel container). Steamed for 10 minutes without pressure valves. let it cool down and ready.

    1. Yes, add 1 cup water approx and after boiling boiling water keep your dhokla batter inside the cooker and steam !

  23. Dhokla has come out really well Sony, well done ! I have tried it a couple of times, it gets hard the moment it cools off. So I have to reheat it everytime I serve it. But apart from that, the result is very pleasing.
