Broccoli Kofta curry–Side Dish For Roti/Chapati

          Kofta curry always brings a big smile on daughter’s face. Usually I made paneer kofta, bottle gourd kofta for her. Then I realized that if they don’t like any veggies, put it in the form of kofta. I am sure they goanna b loved it. Instead of making traditional deep fried kofta, I decided to make koftas in paniyaram/appe pan. It much easier and much healthier. I was wondering about the taste but we enjoyed this with a hot chapati’s.

Prep Time: 20 minutes | Cook time: 30 minutes | Serves: 4

 

Ingredient for Kofta

Broccoli

1 cup

Potatoes ( boiled & mashed)

2

Ginger garlic paste

1 tsp

Garam masala

1/2 tsp

Turmeric

1/4 tsp

Aamchur powder

1/4 tsp

Corn flour

2-3 tsp

Salt

To taste

Oil

1 –2 tsp

Ingredient for Curry

Oil

2 tbsp

Onion(chopped roughly

Tomato(chopped roughly)

1

Cumin seeds

1/2 tsp

Mustard seeds

1/2 tsp

Garlic chopped

1 tsp

Garam masala

1/2 tsp

Turmeric

1/4 tsp

Red chili powder

1/2 tsp

Kashmiri chili powder/ paprika

1/2 tsp

Coriander leaves, chopped

1/4 cup

Salt

To taste

  How to make?
  • Pressure cook the potatoes about 2 whistles, peeled and mashed it.

  • Wash and pat dry broccoli florets, ground it coarsely. Make sure there is no water.

  • Heat a pan with a tsp of oil and cook ground broccoli for 5 minutes on low flame.

  • In a mixing bowl, add mashed potatoes, cooked broccoli , corn flour, turmeric, garam masala, ginger garlic paste, amchur powder and salt. Mix them and make dough.

  • Make small balls and keep aside. Heat Appe/ paniyaram pan,grease it with few drops of oil. Keep them into pan cover and cook it. Flip it carefully and cook from other sides till golden and brown color. Keep aside.

  • For gravy, heat oil in a pan. Add cumin and garlic,muster seeds and fry for seconds. Add onions and cook on medium flame.

  • Add chopped tomato with garam masala, Red chili powder, Kashmiri chili powder, turmeric and salt. stir well. Cook till it leaves the oil from sides.

  • Let it cool down completely and ground it into smooth gravy. Heat pan add this gravy with a 1 & 1/2 cup water and bay leaves. Make a thick gravy. Add chopped coriander leaves and let it simmer for another 5 minutes and turn off the flame

  • Add the koftas and serve hot !!

Notes :

  • I have made this healthy version, if you want you can deep fry koftas, add milk or fresh cream in curry as per your preference. 

  • Do not overcook potatoes, as it retain water and you will not able to make koftas.

  • Instead of corn flour, you can add 1/2 cup bread crumbs.

  • Replace broccoli with cauliflower, cabbage etc.
