Cheesy Tomato Rice/Baath - Kids Friendly Recipe–Easy Lunch Box Recipe

                     Looking for easy and quick lunch box idea ? Getting confused what to make quick and healthy;thy one pot meal ?Confused smile Here it is the easy and quick cheesy tomato pulao. This is very delicious rice and perfect for lunch box with some curd and veggie fry. I made this in my ezee buzee time. Tomato rice can be made with fresh cooked rice or leftover rice. You can paired it up with any raita or chips. It’s a delicious combo and I bet kids will enjoy their lunch box.Hot smile

 

 

Prep Time: 5 minutes | Cook time: 12 minutes | Serves: 2

 

Ingredient

Cooked Rice ( I used left over rice)

1 cup

Tomatoes

3

Onion

1

Green chilli

2-3

Red chilli powder

1 tsp

Garam Masala

1/4 tsp

Turmeric

1/4 tsp

Coriander leaves

2 tsp

Salt

To taste

Cheese/Butter (optional)

For Garnishing

 

To Temper

Oil+Ghee

1+1

Cumin seeds

1/2 tsp

Mustard seeds

1/2 tsp

Urad dal

1 tsp

Chana dal

1 tsp

Garlic (chopped)

1 tbsp

Curry leaves

1 spring

Peanuts

1/4 cup

Cashew

2 tsp

 

How to make?

  • Chop onion very thin slices. Chop garlic, green chili's and tomatoes finely.

  • Heat ghee+oil in a kadai, add  tempering  items one by one and fry till dal gets nice golden brown color. Add chopped green chilli’s and fry for few seconds.

  • Add onion, fry till onion becomes transparent. Add chopped tomatoes and little salt  and cook till it turns out mushy.

  • Add red chilli powder, garam M=masala and turmeric. Cook till all the moisture from tomato evaporates and oil start to leave from the sides.

  • Add rice and mix gently till incorporated well. Cook for 1-2 minutes. Sprinkle chop cilantro and stir well.

  • Garnish hot tomato rice with some grated cheese, kids will surely enjoy this tasty and tangy rice !!

Notes :

  • If you want you can add fresh cooked rice. For this, wash and soak rice for 15 minutes. pressure cook rice with 1 & 1/2 cup water for 3 whistles.

  • Do not add hot rice. Let it cool down completely and then add.

  • Add spice powder according to your taste, you can add sambar powder or pav bhaji masala also.

  • You can add mix vegetables also.
