Happy Navratri to all Navratri recipes are usually no onion no garlic and completely vegetarian. Upwas or fasting kachori is made during Navratri or for any other fasting day. This is simple and easy to make using handy ingredients. This is crunchy & combination of potato, sabudana flour, stuffed with coconut and raisins.
During fasting days people use certain flours like singhade ka atta (water chestnut flour), sabudana flour, samo rice flour( barnyard millet flour) or rajgire ka atta (amranth flour). So this upwas ki kachori is a great and filling snack. Interesting and tasty stuffing gives a twist to the regular kachoris. This can be paired with cocumber raita or yogurt. You must try it out !!

Layered biryani is one of the recipe which I wanted to try out since long time in which Basmati rice layered with spicy masala, sweet and warm aroma garnish with nuts. I had this biryani at my neighborhood aunti’s party. I like this authentic slow cooker biryani. I followed her recipe and here it is perfect blend of spices, tastes and flavored biryani.
Don’t be frighten by the long list of ingredients and lengthy work. It is not that difficult as it shows. A well cooked biryani is when rice & all vegetables are cooked properly. Even though it takes a lot of time to prepare this, the final dish is all worth the effort. A little extra efforts that gives surely a royal treat. A little extra efforts that gives surely a royal treat. Saffron mint and yogurt plays a significant role while making biryani. Deep fried nuts and sliced onions gives a caramelized flavor to biryani.
I made this Layered Biryani for “Shhhhh Cooking Secretly Challenge” conducted by Priya. This month I am paired with Veena shankar. My secret ingredient was Paneer and Rice. I made this authentic and flavorful layered Biryani for that purpose.

Making homemade paneer is very easy. This is first time, I made paneer and cut it into cute and beautiful little blocks, and I am happy with the results. I never thought that this is really very easy to make, low in cost and more nutritious. I always bought store bought paneer and make several dishes. Last week I needed some extra quantity paneer and was not having enough time to get it from grocery store as it was opening late. I thought, I should try out at home and l am very glad with the outcome. Since it is homemade, I will make this soft, juicy, hygienic and nutritious paneer more often.
Paneer is bliss for vegetarian. Nothing can be compared to the tasty , soft and milky flavor paneer. Who says no to this cheesy paneer? Definitely I am not the one and also my family’s favorite !
