The name says itself. Today I am sharing ‘’ Veg Laziz ‘’ a rich, Punjabi style subji, full of flavors and variety of vegetables. This is quick dinner or to serve your guest in short notice, this worked best for me. My guest gives a positive feedback and kids also loved this subji. One of the richest gravy so far I tried and tasted. So I am sure you feel happy once you try and serve this !!
Boil mix vegetables for 8-10 with little salt. Meanwhile In a pan add items under ‘ For onion paste’ and cook till onions turn golden brown in color. Keep aside to cool down. Check mix vegetables cooked properly, strain water and keep aside.
Heat pan with oil+ butter. Add bay leaves,Ginger garlic paste and onion, fry till onions become pink. Add tomatoes and cook till become mushy. Add boiled vegetables and stir. Add onion paste and mix well.
Add tomato puree and give it a stir. Add dry spices red chilli powder, cumin powder, coriander powder, Garam masala, chat masala and mix nicely. Add little water ( approx. 1/2 cup) and salt, cook for another 4-5 minutes. Sprinkled coriander leaves and turn off gas.
Served with naans or plain rice !!

Ghee can be replaced with butter, but butter gives extra flavor to curry.
