Ragi Chocolate Muffins – Eggless Butterless Whole Wheat Muffins

            I am not a big fan of cakes and muffins, but my daughter and husband both love to eat desserts, cakes, fudges etc……  Every time I am trying to give my family healthy and nutritious food.  These chocolate ragi muffins are surely a healthy treat for my family. This muffins recipe adapted from here, the muffins came out extremely well. Look at the muffins, It is very hard to guess that there is a ragi in the muffins. This is eggless, butterless and flour less recipe which everyone wants to try it out !! As far as the texture, it is moist and soft.

               

             I made Ragi Chocolate Muffins for “Shhhhh Cooking Secretly Challenge”conducted by Priya. This month I am paired with Anitha Sundramoorthy My secret ingredient is Ragi and Chocolate. I made this super healthy and nutritious muffins.

Prep Time: 10 minutes | Cook time: 25 minutes | Makes: 12

 

Ingredient

Ragi flour

1/2 cup

Cocoa powder

1 tsp

Whole wheat flour

1 cup

Sugar

3/4 cup

Baking soda

1/2 tsp

Baking Powder

1 tsp

Hot water

1 cup

Milk

3/4 cup or less

Oil

1/4 cup

Curd/Yogurt

1/2 cup

Vanilla (optional)

1/2 tsp

Salt

1/4 tsp

 

How to make?

  • Preheat oven to 350 F. In a mixing bowl sieve dry ingredients i.e whole wheat flour, ragi flour,salt,baking powder and baking soda and keep aside. In another bowl mix wet ingredient i.e curd, milk, oil, and sugar. Whisk till all the sugar dissolves.

  • Add sieve mixture in to wet mixture slowly by adding 1 tbsp at a time and mix gently. Add hot water slowly and combine well.

  • Line muffin tray with paper cups. Pour the batter into muffin cup and bake for 25-30 minutes or till insert toothpick turn out clean. (For me it took 25 minutes)

  • Let them cool down on wired rack and enjoy this healthy and delicious muffins !!

Notes :

  • You can use all purpose flour instead of whole wheat flour.

  • Instead of muffins, you can use 8’ cake pan.

  • Adding chopped nuts to give a different taste.

  • Ragi flour has no gluten, the muffins are tend to be slightly crumbly. Chill for sometime and then enjoy it .

  19. How to make ragi flour...i got ragi from the market ...it is in the form of grains...and it looks like rai....pls help...i really wanna tryur recipe for my kids...also tell me which oil to use

    1. Madhu, my mom usually makes ragi flour in two ways.
      1. Dry roast ragi on low heat. Cool down completely and grind it up into flour.
      2. Wash the ragi seeds thoroughly 3/4 in water. Immerse the ragi with enough water and soak it overnight. Next day drained all the water, line cheese cloth in colander and por the drain ragi in it. Tie it up and keep it for 12 hours. Now spread it in a cotton cloth and let it dry completely. Give it to mill or grind in mixie.

  20. Thanks sony...first option is much more simper...i wonder why would anyone go for second method....
    Can u also tell me which oil can be used...can i skip cocoa and vanilla as I dont have it in my kitchen

    1. I used vegetable oil. Cocoa and vanilla are the most important flavors in ragi cupcake, if you dint have you can use instant coffee powder. Hope it helps !

  24. I am actually trying your recipe now... When I started pouring the hot water the entire semi solid paste like becme watery.. Should the consistency be watery?
