Ingredient

Besan/Gram flour/Ladu besan

3 & 1/2 cup

Powdered sugar

1 & 1/2 cup

Ghee

1 cup

Cardamom powder

1/2 tsp

Chopped nuts (optional)

1-2 tsp

How to make?

  • Melt ghee and keep aside.

  • Heat pan on low flame. Add gram flour and roast it about 15 minutes. Keep stirring continuously  so that besan does not burn. After 15 minutes you can see, gram flour turn into nice golden and brown color. Add melted ghee and keep stirring besan for 4-5 minutes on low flame.

  • At this stage besan will have nice aroma. Mixture looks like little heavy and thinner, turn off gas and let the mixture cool down completely. Once the besan is cool add sugar and combine well.

Notes:

  • Do not add sugar when besan is hot.

  • If roasted besan is not forming ladoo, add 2 tsp milk or ghee and stir.

  • If you add sugar in unroasted gram flour, then the uncooked gram flour will have raw taste in the ladoo. It will affects on sweetness of the ladoo.

  • I used ladoo besan, this is little bit coarse in texture. You will get it in any Indian grocery store.
