Vangi Bhaat/Bhat–Brinjal Rice

                   Good option for those who don’t like brinjal !! This is my favorite  and tasty one pot meal. Vaangi Bhaat is a classical Maharashtrian dish. My mom makes a flavorful vaangi bhaat with lovely aromatic spices. She is making spice powder in home and use whenever she makes pulao, Biryani.Today I share this easy and delicious one pot meal and wonderful combination of eggplant and flavorful spices.

Prep Time: 35 minutes | Cook time: 20 minutes | Serves: 2

 

Ingredient

Basmati Rice

1 cup

Brinjal

7-8

Onion

1

Tamarind juice

1 tsp

Turmeric

1/2 tsp

Green chilli

2

Ginger

1 inch

Garlic

2-3 pods

Salt

To taste

 

To Temper

Oil/ghee

2 tsp

Cumin seeds

1/2 tsp

Mustard seeds

1/2 tsp

Curry leaves

7-8

Asafetida

1/4 tsp

 

To Roast & grind

Coriander Seeds

1 tsp

Pepper corns

4-5

Cumin seeds

1/2 tsp

Poppy seeds

1/2 tsp

Cinnamon

1 inch piece

Cloves

2

Cardamom ( Inside part)

2

Red chilli

2

 

How to make?

  • Wash and soak rice for 1/2 an hour. Make a paste of green chilli, garlic and ginger in mixer jar. Soak cashew in warm water and set aside. Cut the onion into thin stripes, also cut brinjal into stripes and keep them in water.(By keeping in water, brinjal wont turn black)

  • Heat a little oil and roast all the items under table ‘To Roast & grind’ till golden brown in color. keep aside to cool down completely. Grind it and make a powder.

  • Heat oil/ghee in pan, add items under ‘To temper’ and fry for a seconds. Add onion and sauté till golden brown color. Add grinded masala, tamarind juice, chilli paste and cook for a minute. Mix well and cook for another minute.

  • Finally add rice and mix well. Add hot water (approx. 1&1/2 cup) and salt and give it a stir. Sprinkle soaked cashew and coriander leaves. Cook for 15 minutes.

  • Enjoy this hot Vangi Bhat with raita or pickle.

Notes :

  • Use hot water only while making biryani/ bhaat. It gives nice texture to rice.

  • Rice and water ratio is 1:1 & 1/2 when rice is soaked at least 30 minutes.

  9. I make the rice and gravy separate, then mix . cooking it together is great.. even the brinjal is not over cooked... Will try your version :)
