Eggless Dates cake–Dates loaf cake recipe–No Egg No Butter Cake Recipe

Well, my blog is a great platform for me to learn variety of cuisines and cook delectable recipes. For celebrating sweet moments, I am sharing eggless dates cake today.Birthday cake I found this recipe here. The cake is completely eggfree and butterfree. It is very easy and healthy treat too. Tried this and came out soft, moist and tasty cake loaded with crackling almonds and walnuts. Try out this healthy cake and cherished your sweet occasion.

Prep Time: 15 minutes | Cook time: 30minutes | Serves: 2

 

Ingredient

All purpose flour

1 cup

Dates (seedless)

18

Nuts (I used almonds, walnuts)

2 tsp

Granulated Sugar

3/4 cup

Milk

3/4 cup + 2 tsp

Oil

1/2 cup

Baking soda

1 tsp

Salt

1/4 tsp

 

How to make?

  • Preheat oven to 350 F/ 176 C. Line 8” loaf pan with butter paper and grease with oil and keep aside.

  • Warm 2 tsp milk in microwave and soak dates, set aside. In a mixing bowl add sugar, milk and oil, whisk till sugar completely dissolve.

  • Sift flour, baking soda, and salt and keep aside. Grind the dates along with milk and make smooth paste. Add dates paste in milk and sugar mixture, stir well.

  • Add sift flour slowly and mix well till all the ingredients are combined. Add chopped nuts and mix gently. Pour batter in grease loaf pan. Sprinkle some nuts on top.

  • Bake it for 30-35 minutes or until inserted toothpick come out clean. ( Mine is done in 30 minutes) Set aside to cool down completely.

Notes :

  • I have used dark brown dates. If you want to use brown dates, cake color will be bright.

  • If you want healthier version, replace wheat flour instead of all purpose flour.

  • I have used loaf pan, you can bake it in cake pan also.

  • Adjust sugar according to your taste.

    1. Hi, Iam vegetarian, so no idea about quantity of eggs!! I haven’t tried this cake with butter. The oil makes this cake much much easier, because if butter is used, the initial beating process takes a lot of time. So I still suggest you to use any vegetable oil
