Eggless Blueberry Muffins

       Blueberry muffins are my daughters favoriteIn love. She likes to eat blueberries as it is or in the form of muffin. When she is craving for this muffins, I use to buy it from store. This was top item in my shopping list. This time I decided to try out this soft, fluffy, delicious muffins! My daughter had it and liked it too.

        If you don’t have fresh blueberries, you can add Choco chips, nuts or dry fruits or any fruit bits. Also you can try out plain muffins, these taste so good! I couldn’t stop admiring these beauties.

Prep Time: 10 minutes | Cook time: 20 minutes | Serves: 11

 

Ingredient

All purpose flour

1 &1/2 cup

Fresh Blueberries

1 cup

Baking soda

1 tsp

Baking powder

1 tsp

Corn flour

2 tsp

Sugar

3/4 cup

Butter

1/2 cup

Milk

1 & 1/2 cup

Vanilla Extract

1 tsp

 

How to make ?

  • Wash and dry blueberries with paper napkin/ kitchen towel. Sprinkle some all purpose flour and keep aside.

  • Line your muffin tray with muffin liners. Preheat the oven to 180C/ 360F.

  • Take a mixing bowl, sieve all purpose flour, baking powder, baking soda. mix well.

  • Add milk and sugar in the mixture, whisk till all the ingredients combined.keep aside for 3-4 minutes. you can see mixture to be frothy.

  • Mix melted butter and vanilla in the mixture. Add corn flour and mix well.

  • Fold in the blueberries gently to the mixture and mix evenly.

  • Fill muffin cups with 3/4 full of batter using spoon or ice-cream scoop. Bake for 18-20 min. (mine took 18 min to cook). You can check it by inserting tooth pic, it should be come out clean.

  • Let it cool down over wire rack. Eggless blueberry muffins reedy to serve !!

Notes :

  • Do not forget to sprinkle some all purpose flour on blueberries, as the blueberries doesn't stick into bottom of the cupcakes.

  • Butter can be replaced with oil or margarine.

  • Do not beat batter after adding blueberries just mix them.

  2. looks so cute.. :) when i tried blueberry cake earlier it totally sticked to the bottom of pan.. then i read somewr to dust it with all purpose flour... its gr8 that u mentioned it in "tips" already.. :)

    I made these today.
    They turned out good. But I have a few questions
    1) My muffins ddint rise as much as in your pic
    2) Was your batter also too runny ???
    3) I got 12 muffins + 1 mini bread loaf size also.

      Usually old stock of baking powder could be the reason. Another possibility is that you might be overbeating the batter. Just fold in the batter – it helps to incorporate more air into the batter and will help it to fluff better while baking. Hope this helps

Since I made it for my 1.5yr old, I replaced APF with the same quantity of wholewheat atta...Didn't have blueberries in hanf to substituted with tutti fruti...Even though its my 1st attempt at baking muffins, they came out fantastic, just fell in love with the fluffy puffy muffins..thanx a tonne..
