Cashew Oats cookie–Eggless Cashew Oats cookies

            As the name says this is healthy and low calorie cookies. All the ingredients in this recipe are guilt free and unprocessed. No sugar, no maida and no baking powder but this cookies are very flavorfulApplause. With minimal ingredients going into this, cashew cookies are bit crunchy texture. Cookies are my daughter favorite, she loved any kind of cookies. I made this healthy and flavored cookies with very less time. Here is the recipe………Thumbs up

Prep Time: 10 minutes | Cook time: 15 minutes | Makes: 15-18

 

Ingredient

Oats

1 cup

Cashew

1/4 cup

Wheat flour

1/3 cup

Honey

1/4 cup

Curd

1 tsp

Vanilla essence

1/2 tsp

 

How to make?

  • In a mixer grind cashew and make coarse powder and keep aside.

  • Again take oats and grind into coarse powder, keep aside.

  • In large bowl mix oats powder, cashew powder along with wheat flour, honey, and vanilla extract. Mix well to combine all ingredients together.

  • Make a smooth dough by adding a tsp of curd.

  • Cover the dough and keep refrigerate for 45 minutes.

  • Preheat oven 350 C (180 F). Make small lemon size ball and flatten them gently by using your palm.

  • Place cookies little apart in a baking tray lined with butter paper. Bake for 12-15 minutes or till they begin slightly brown around the edges. Keep eye after 10 minutes.

  • Let them cool down, cookies at this stage are soft but after cool down it becomes harder and crunchy.

  • Enjoy with hot cup of tea or coffee.

Notes :

  • Use powdered sugar instead of honey.

  • Do not over bake cookies, it will burn and ruin the taste.

  • If the dough doesn’t hold together, add extra 1 tsp curd to make smooth dough.

  24. Great recipe; I'll be sure to try soon. Just fyi, the oven temp you've mentioned seem to be reversed (should be 180C/350F). You may also want to mention that you've used a fork to make those striped imprints. =)
