Capsicum Potato Fry–Aloo Simla Mirch Subji

                    Aloo Simla Mirch is quick and easy side I have been making at least twice a week. It cooked fast, so never remain raw or uncooked. This dry vegetable curry that has no liquid and it doesn’t need to be ‘’chopped fine’’. I usually stuff this subji in the middle of chapati and make a rolls for my daughter. It is very easy to carry and also healthy filling.  It tastes best when it is hot and can be served with Naan, Rotis.

Ingredient

Capsicum (Simla mirch)

2

Potato

1

Onion

1

Garlic

1 tsp

Cumin seeds

1/2 tsp

Mustard seeds

1/2 tsp

Curry leaves

1 string

Asafetida

1 pinch

Garam masala

1/2 tsp

Red chili powder

1/4 tsp

Sesame seeds

1/4 tsp

Crushed peanut

2 tsp

Moong dal / Mung bean

2 tsp

Oil

2 tsp

Salt

As per taste

 
How to make?
  • Wash and chop capsicum and potato. Finely chop onion and garlic.

  • Heat oil in kadai or wok, add cumin, mustard, garlic, asafetida and curry leaves. Fry for few sec. Then add chop onion and saute till light brown in color.

  • Add garam Masala, red chili powder and turmeric and sesame seeds. Mix well.

  • Add both veggies and cook over medium flame. Add roasted peanut powder and stir well.

  • Add moong dal and 1/2 cup water with required salt in the mixture. Let the vegetable gently cook on medium flame for 56 min without any lid.

  • When the vegies get cooked, turn off flame.

  • Garnish with cilantro and serve with hot roti’s/ phulka’s.

Notes:

  • You can add kasuri methi to give it Punjabi flavor.

  • Also you can combine with other veggies like, carrot, paneer, peas.

  • Adding more onions gives nice flavor.

  1. This one is a favorite with me too!! adding moong dal to it is a nice idea!! BTW, do we have to cook it for 56 minutes after adding moong dal?
