Sabudana Vada – Sago Vada

               Sabudana vada is another delicious recipe prepared during fasting days like Navaratri, Shivaratri. Its very famous Maharashtrian recipe which I learnt from my mother. She makes awesome vadas!! Laughing out loud Its crispy & tasty. It can be eaten in the morning or as evening snack. It is very easy to prepare and requires little preparation.

               In Pune (Maharashtra), there are lots of vendors, hawkers selling Sabudana vada with chutney. You will find it in many restaurants/canteens in Pune/Mumbai. Now here is the recipe !!

Soaking Time: 4/5 hrs | Cook time: 20 minutes | Makes: 12

 

Ingredient

Sabudana/Sago

1 cup

Boiled potato

2

Roasted peanut powder

1/2 cup

Sugar

1/2 tsp

Grated Ginger

1/2 tsp

Lemon juice

1 tsp

Salt

As per taste

 
To Grind

Cumin Seeds

1 tsp

Green chilies

2/3

 

How to make ?

  • Wash and Soak sabudana in water. Drain excessive water. Cover and keep aside for 5 hours or overnight. In morning sabudana will puff up and soft to touch.

  • Grind chilies and cumin seeds coarsely.

  • Boil potatoes, peel them and grate them finely. Take a wide bowl, add sabudana, grated potato, roosted peanut powder, sugar, lemon juice, salt and cumin chili paste.

  • Mix well together, do not knead too much.

  • Apply little ghee on palm, take lemon size portion and shape them into round balls or flat patties. Make all the vadas.

  • Heat oil on medium flame, add vadas carefully, cooks both sides till golden brown.

  • Serve hot with coconut chutney or curd.

Notes :

  • Soaking sabudana is important part of this recipe. If you soak sabudana in excess water then it will turn sticky.

  • Oil should not be too hot, otherwise vadas get burnt and uncooked.

  • You may add coriander leaves in vadas, I haven't added since we do not eat coriander on fasting day.

  • For more crispy vadas, you can make flat patties.
