Kesar Phirni–Saffron Flavor Rice Pudding

           Phirni is one of the popular dessert from North India. A traditional Phirni made with ground rice and milk thickened, although it’s not that difficult. It was easy and took less time to prepare with different flavors. In our childhood mom makes this with lot of flavors and nuts. Then I decide to make it for todays dessert. I called her and understand the recipe and made. It turned out really good. Phirni is simple and elegant rice pudding. This dessert reminded me my childhood memories. Here is the simple and easy recipe.

 

Prep Time: 30minutes | Cook time:40 min | Serves: 4

 

 Ingredient

Milk ( I used whole milk )

3 cup

Basmati Rice

1/4 cup

Sugar

3/4 cup

Cardamom powder

1/2 tsp

Nuts (almond/pista)

1 tsp

Saffron

Pinch

 

How to make?

  • Wash and soak rice in the water for 25 min. Drain the rice completely and grind in blender till the consistency like rava or samolina.

  • Soak the nuts into hot water for 1/2 hour, peel of the skin and chop finely.

  • Heat milk in pan,when it start boiling take 1 tsp. milk and soak saffron in it.

  • Keep the flame slow. Then add ground paste of rice and stir continuously to avoid any lumps or burnt.

  • Add sugar and mix well. Cook this on low flame about 15/18 minutes until the mixture becomes semi thick.

  • After rice cooked perfectly , add nuts, saffron and cardamom powder and mix well, cook for another 5 min.

  • Turn off the stove and pour into serving bowl .Garnish with nuts and refrigerate for 2 hours.
