Baingan Bharta is another very hit dish in my family. Baingan bharta is typical North Indian recipe prepared by using roasted eggplant. These recipe has many variations according to state of Maharashtra. Some people add tomatoes to give tangy flavor, some give tadka or some add curd to give savory taste. Today I’m going to show, how are we making this dish at home? This is very simple and easy to make recipe. We called this as “ Vangyache Bharit’’ (in Marathi language). As all ingredients are raw, it gives different taste to your tongue.
Preheat oven to 450 F. Grease eggplant with few drops of oil, make thin slits in the eggplant using knife. This will easy to cook faster. Roast or broil eggplant for 40 min. After 20 mins flip the eggplant and roast other side.
Remove the tray, take out eggplant and keep aside to cool down. Then gently peel of the skin and mash it with your hands.
Finely chop onions and add into mixture. Add dry spices i.e. red chili powder, coriander powder, cumin seeds, turmeric, sesame seeds, oil, salt and mix well.
finally add crushed peanut and cilantro, stir well
Serve with Roti.
To give extra flavor, you can add tomatoes,curd or grated coconut also
You could also roast directly on gas flame, it will take less time than oven.
