Eggless Shortbread Cookies–3 Ingredient Cookie

                  This is my 3rd attempt to prepare this eggless cookies. I have tried twice but it doesn’t roll out properly and over cooked, but this time after refrigerating cookie dough for long hour and concentrating on baking, it came out well. Shortbread cookie recipe is easy to mix and bake with 3 handy ingredients ~ Flour, Butter, Sugar !! what a simple way to do this !!Nerd smileThese shortbread cookies are always the best with hot tea or coffee. I am sure, you will definitely love it & you will never go to grocery store to purchase these cookies.

Coconut Coriander Chutney

                 Coconut chutney with coriander leaves, is mostly served with idly, dosa, pakoras. Chutney is less time consuming and simple to make. In my family everyone loves green chutney with or without coconut. Anytime chutney is available in my kitchen & we are enjoying it with dosa, vada, sandwich or snacks. So here you go for simple yet flavorful chutney.

                Rava upma is another simple quick breakfast recipe. There are many ways to make upma, various seasoning or different types of veggie added into upma.This is easy upma prepared with roasted semolina / suji / rava. It is extremely soft and spongy in texture. This is the recipe you can served to when unexpected guest arrives. This is kids favorite dish & definitely they will finish it within no time Laughing out loud

Almond Milk / Badam Milk / Badam Kheer

                   Badam milk is flavorful and refreshing drink, blended with all nuts. The wonderful flavor of saffron enhance the taste. Almond milk is easy to make but it takes time for soaking nuts. This can be served hot or cold and anytime of the day. This is very healthy and nutritious drink. Almond milk is to increase memory and concentration. You can have few almonds daily, it helps to fulfill protein needs, develop memory and helps in weight loss. Almond milk is indeed flavorful drink for children.

Bhindi Fry – Okra Fry

            Bhindi is one of my favorite vegetable. Mom used to regularly send Bhindi fry as part of my school lunch. I have loved the Bhindi fry even my daughter likes it in all way. Bhindi fry is simple and quick stir fry can be served for lunch or dinner. Bhindi/okra/Lady’s finger is low in calories and plenty of vitamin A, C and fiber. This is one of the very simple Bhindi fry which I like to make often. Steamed rice with Tadka dal are much liked accompaniment with this Bhindi fry.

            Kokum is another ingredient which I used to add for sour twist, quite like the tamarind because this can reduce fat, purify blood, digestion and also reduce cholesterol!

           On this beautiful colors of festival, I wanted to make some quick but delicious dessert. I thought of Besan burfi for today’s occasion. Besan burfi is one of the traditional sweet served in festivals and marriages in India. Besan Burfi is a sweet and tasty dessert made with Besan and Ghee. Main ingredient of every sweet is ghee across all part of India. These are quite similar to Besan ladoo and Besan Halwa in taste.

           Methi paratha is another tasty recipe. When we were busy with our exam, for us, my mom was preferring some healthy meal with less oil . And Paratha was perfect break from our busy studies. Also this recipe, I learnt from my momSmile. Green or leafy vegetables are very healthy and they are perfect fit in your diet chart. This is low fat recipe. Simple yet delicious methi paratha with raita or pickle or curry of your choice.

                 Baingan Bharta is another very hit dish in my family. Baingan bharta is typical North Indian recipe prepared by using roasted eggplant. These recipe has many variations according to state of Maharashtra. Some people add tomatoes to give tangy flavor, some give tadka or some add curd to give savory taste. Today I’m going to show, how are we making this dish at home? This is very simple and easy to make recipe. We called this as “ Vangyache Bharit’’ (in Marathi language). As all ingredients are raw, it gives different taste to your tongue.

                 Kanda pohe is popular, tasty Maharashtra recipe. Kanda pohe is easy and quick breakfast using green peas, carrots, cashews etc. Its absolutely favorite in our family. Kesar Phirni–Saffron Flavor Rice Pudding

           Phirni is one of the popular dessert from North India. A traditional Phirni made with ground rice and milk thickened, although it’s not that difficult. It was easy and took less time to prepare with different flavors. In our childhood mom makes this with lot of flavors and nuts. Then I decide to make it for todays dessert. I called her and understand the recipe and made. It turned out really good. Phirni is simple and elegant rice pudding. This dessert reminded me my childhood memories.
