Eggless Chocolate Muffin

              Chocolate muffin is very easy to make with no eggs. It requires handy of ingredient to make muffin quickly. These vanilla flavor muffins,filled with lots of chocolate chips are very moist. My Butterfly loved this chocolate muffin so much. Always she want to eat muffin to skip the milk, she doesn’t like milk at all. She truly love pretty,simple, delicious chocolate muffin. These are perfect with morning tea or coffee.

 

Prep Time: 15minutes | Cook time: 20 minutes | Makes:  small 12 or large 6

 

Ingredient

All purpose flour/ Maida 1 cup
Sugar 1/2 cup
Yogurt 1/2 cup
Oil 1/4 cup
Cocoa powder 1/4 cup
Water 1/4 cup
Chocolate chips 1/4 cup
Vanilla essence 1 tsp
Baking soda 1/2 tsp
Baking Powder 1/2 tsp
Corn flour 1 tsp
Vinegar 1 tsp
Salt 1/4 tsp
 

 

How to make ?

  • Preheat oven to 375 degrees F (190 degrees C).
  • In large bowl sieve Maida (all purpose flour), coco powder, baking soda and baking powder, corn flour then mix salt and sugar, stir well. In another bowl take yogurt, water, sugar, oil, vanilla essence, vinegar and whisk together to remove any lumps.
  • Mix dry ingredient into wet ingredient, stir well until all the ingredients are combined. Mix chocolate chip into batter.

  • Evenly fill the muffin cup with spoonful batter till 3/4 of the muffin cup.Line-up the muffin tray in the center of the oven. Bake in the oven about 20/22 min until toothpick inserted comes out clean.

  • Remove muffin tray from over and cool down on wire rack.

  • Finally you can eat pain or sprinkle some powdered sugar and enjoy with tea or coffee!

Notes:

  • Use room temperature yogurt only.

  • I use normal sugar, if you want you can use icing sugar too.

  17. Thanks for this recipe, do you bake with low carb flours like almond/coconut flours? If so what is the ratio substitute for AP or Maida? Appreciate all your response!
