Dal Baingan

Ingredient

Quantity

Brinjal / Baingan

4

Onion

1

Tomato

1

Coriander powder

½ tsp

Cumin Powder

½ tsp

Turmeric

¼ tsp

Red chili Powder

½ tsp

Cilantro

1 tsp

Asafetida

1 pinch

Salt

As per taste

Ginger garlic paste

½ tsp

Water

2 cups

 

For Tempering

Ingredient

Muster seeds

½ tsp

Cumin seeds

½ tsp

Curry Leaves

½ spring

Mung Dal

1 tsp

Tur Dal

1 tsp

 

How to make?

  • Cut the Brinjals or eggplants, onions and tomatoes evenly.

  • Make sure to keep Brinjals pieces in water.

  • Heat a wok on medium flame; add oil and tempering items with ginger garlic paste.

  • Add onion and fry till it becomes golden brown. Add tomato with salt and cook till they become soft.

  • Add cumin powder, coriander powder, red chili powder, turmeric and pinch of asafetida. Then add pieces of Brinjals & fry it for another 5 min.

  • Add 2 cups of water & cook it for 10/12 min till the Brinjals become soft.

  • Garnish with coriander leaves and serve with Rice, Roti or Paratha.
