Aloo Methi

            Aloo methi is very authentic dish and made with very less ingredients. Its very famous in Punjabi cuisine. when we went to Florida for a vacation, and we tasted this aloo methi dish for dinner. It was really delicious and simple to make. Then I decided I want to try this and it turned out good.

            Methi leaves are green vegetable and full of nutrients. Methi has bitter and tangy taste which helps to lower sugar in diabetic peoples. This recipe is very healthy because fresh methi is very rich in vitamins and potassium. So whenever I get fresh methi leaves,I 'will make this for sure!

Prep Time: 15 minutes    Cook time: 25 minutes    |  Serves: 3-4

 

Ingredients

Quantity

Boiled Potato

2

Methi (fenugreek) leaves

2 cup

Oil

2 tsp

Garlic chopped

1 tsp

Green Chili

2/3

Turmeric

1/4 tsp

Coriander powder

1 tsp

Salt

As per taste

 

How to make?

  • Wash methi leaves 2/3 times in large bowl of water, so that it will completely clean and mud is strained out. Chop them evenly and sprinkle some salt and keep it aside for 10 min.

  • Chop boiled potatoes into small cubes.

  • Heat oil in pan. Add cumin seed, garlic, green chili and asafetida. Add potato cubes, salt, turmeric and  coriander powder, mix it well and cook for another 5-8 minutes.

  • Squeeze out excess water from methi leaves and add it to the potatoes, mix well

  • Cover and cook for 5 min.

  • Serve with roti, rice.


 

Notes :

  • You can replace potatoes with Cauliflower

  • You can add dry red chilies also to increase the hotness

    .
