As I am on vacation and enjoying at my moms place, I know I am blogging and posting few times. Today I have for you all, healthy, low-fat and delicious carrot muffin. I saw this recipe here and wanted to try out for my family. This is no egg, no butter and no all purpose flour muffin which is surely guilt free and big hit in my family. I made this long back and saved in draft so that I will post in my vacation days. Do try it and they will definitely praise of you, what else you need !!

To Celebrate the first anniversary, I made chocolate ladoos. Easy and quick dessert for kids. It is perfect for any birthday party, get together or any occasion. I saw this recipe in cooking show and without a moment I have written down. I tried and my daughter loved it. I am sure you will try it, your kids will surely enjoy these cute little ladoos.

Soya and broccoli makes an excellent combo to feed healthy and protein rich snacks to fussy kids. Soya chunks is a wonderful source of protein where as broccoli is healthy and low calorie veggie. I know many would not prefer broccoli but I usually add into pasta, pizza, soup. My daughter like boiled broccoli with pizza sauce. This is perfect tea time snack or excellent snack when kids coming back from school.

Scratching your head what to do with leftover rice ? Its not a big deal when you have ladies finger in your pantry. Today’s post is easy and flavored “Bhindi Rice”. Okra is our family favorite veggie. whenever I make simple bhindi stir fry, it will finish within no time. All my family needs just hot fluffy chapaties / roti, that’s it !! Last Sunday, I made rice for lunch but after heavy breakfast, my family had only curry, roti and buttermilk. I tried this bhindi pulao with leftover rice for dinner. Raita or pickle goes well with this pulao.

Are you bored of eating same plain or stuffed paratha !! Then try out this fusion combo, spring onion and cheese paratha. I make aloo paratha, methi paratha, sev paratha regularly, but today I tried these cheesy, soft parathas and served them with a raita. My kid loved a lot. Thses parathas melt in mouth and cheese oozing out from every bite, ahh so yummmm !! Do try out this cheesy paratha for your kids lunchbox or serve them as a breakfast. I am sure they will be too happy !!

Finally I prepared instant soft, spongy, porous and fluffy dhokla !! As I wanted to try out dhokla when I saw few sites and like this version. I packed this quick and tasty snack for my daughter. She loved it, so this is one more snack item added in my snack list. Dhokla belongs to Gujrati cuisine and its super fluffy and wonderful. This is my quickest version, do try it out and share your feedback !

Chirote is very popular traditional sweet in Maharashtrian Diwali. It is crispy, flaky and prepared with flour, suji, ghee and powdered sugar. Process of making them is bit tedious but after making these crunchy goodies, you cant resist yourself to grab countless. This is again my moms special recipe, I love everything she makes for Diwali but her Chirote are the best !! It can be prepared by two methods. One is dipping chirote in sugar syrup and second is sprinkled powdered sugar after drain chirotas. I followed the second method. On This Diwali try out this famous Indian sweet for your family and friends !!

Diwali reminds me all my childhood memories! During Diwali my mom prepares all Diwali sweets and snacks. Morning start with theses sweet and crunchy shankarpali with hot cardamom tea. Everyone should gather to enjoy this munch. I followed my moms full proof recipe. So here is crispy, flaky and melt in mouth shankarpali. It is popular and traditional snack in Maharashtra.
There are two kinds of shankarpali, sweet and spicy. I will post spicy shankarpali version soon, which my mom makes with pepper powder and cumin powder. This is sweet version and my family totally loves it. Its quite easy to make !!

Kofta curry always brings a big smile on daughter’s face. Usually I made paneer kofta, bottle gourd kofta for her. Then I realized that if they don’t like any veggies, put it in the form of kofta. I am sure they goanna b loved it. Instead of making traditional deep fried kofta, I decided to make koftas in paniyaram/appe pan. It much easier and much healthier. I was wondering about the taste but we enjoyed this with a hot chapati’s.

There are few sweets that you hold in a supreme position in your mind. Sweets like kaju katli and Rasmalai are two most popular sweets that everyone loves it. In India, Kaju katli is very famous sweet and often presented to the guest on auspicious occasions or during Diwali Festival. I referred too many sites and found the correct measurement. I tried this twice before but the somehow I added powder cashew after sugar syrup passes the correct consistency. This time I waited till the exact sugar consistency and turn out perfect !! Sugar consistency plays a vital role here.
For a perfect kaju katli you have to learn few techniques i.e perfect sugar syrup, grinded cashew and most important kneading the dough. You have to be careful right from the first step to get perfect melt in mouth katli. Now I am confident to make this sweet again……

Scratching your head what to do with leftover stuff ? Today I have for you a quick and instant Chapati Ladoo, which is loved by all especially kids. My mom usually make this in the morning with leftover chapathis remaining from previous day. Me and my brother always fights for these yummy ladoos. I made this ladoo with morning leftover chapathi’s for my daughter when she come back from school. Try out these quick and delicious snack with very handy ingredients.
Diwali festival in Maharashtra is incomplete without crunchy Chakli and cute crescent shape layered karanji. Karanji or gujia is very popular in Diwali among all Maharashrian households. You forget everything when these crunchy and crispy karanji’s melt in your mouth.
My mom makes this usually 2-3 days before Diwali. Generally stuffing is made with fresh dry coconut, rava, and powdered sugar. But you can use dry fruits, khava and gulkand or even freshly grated coconut etc for stuffing. While preparing these you have to invest more efforts and time, but believe me, its worth. Last week I went through recipe index, suddenly I clicked that I don’t added soup category. As my family love it creamy and healthy soup always. I usually prefer to make tomato, beetroot soup but my daughter love to eat carrot soup with fresh cream. Carrot soup is very simple and easy to make. It is perfect for anytime in winter.
